Great balance and acidity with a depth of flavour and tannin, apricot notes and a slightly bitter finish.
'Brisat' is the Catalan word for orange wine. Metamorphika is a project produced by Joan Franquet of Costador located in Conca de Barberà, Tarragona. This wine is made using Macabeo grapes from sixty-year-old vines grown in white clay/calcareous soil on singular mountain vineyards at 800m altitude. Beginning and ending its journey in clay; immediately after harvest, 50% of the grapes are pressed and passed to large Tinaja (amphorae) with their skins. The other 50% of grapes are destemmed and the berries places whole in separate amphora. The juice spends six weeks on skins, where the fermentation takes place, before being passed by gravity to old French oak and foudre barrels for seven months. It is then bottled in ceramic with a wax seal to finish its ageing process.
